We celebrated my nephew’s first birthday last night, and enjoyed dinner with immediate family and in-laws. Once I got home, however, I started my nightly routine of envisioning today’s lunch. Here’s what I put together for Thursday bento:
- Savory tamagoyaki with organic egg, broccoli rabe, and shredded chicken
- Soba noodles with sauteed organic Napa cabbage, sliced organic carrots, organic Trader Joe’s “Foursome” veggies (carrots, corn, string bean and peas), organic onion, seasoned with a tiny bit of butter, soy sauce, white pepper
- Roasted organic beets, quartered and halved
- Turkey meatballs braised in a sweet-sour sauce
Tomorrow is pizza day!
