I’ve been running out of time, ideas and energy this past week, and actually fell asleep in my daughter’s room as I was tucking her into bed. I remember – I snuck one of our cats into the little one’s crib by bribing the cat with her “blankie” which she ecstatically kneads every night with her paws. I then went to my older daughter’s room, ran my fingers through her hair while singing a Japanese lullaby, and then lay down next to her just … for… a second…
I woke up about half an hour later, panicked, realizing I still hadn’t thought of today’s lunch, the dog was outside in the yard, I hadn’t unloaded the dishwasher, the Christmas cards were still where I left them….
So I decided for today, simple is better. The ingredients, with the exception of the patterning in the rice reminded me of color blocks.
Here we go:
Chopped Blanched spinach, well-drained (and wrung) seasoned with ponzu dressing
Steamed beet slices
Boiled egg
Multi-grain (quinoa, barley, brown rice, millet and wheat berries) rice with salmon furikake, or rice seasoning with seaweed, sesame seeds, katsuobushi, flaked salmon and salt.
